If you are struggling with your commitment to salad at lunchtime, get inspired by the JAR salad.
Here’s how I do it
Add 1-2 tablespoons of great quality dressing to the bottom of your jar.
Top with around 100g protein – try tuna, chicken, leftover meat from dinner
Add some roast vegetables, my favourites are roast pumpkin, red capsicum and zucchini.
Throw in some cherry tomatoes.
Grate some carrot and radish finely on top
Finally, fill the jar with mixed green salad leaves, baby spinach, finely sliced kale or whatever you can find in the fridge.
Make this in the morning and when its time for lunch tip a few times to mix and ENJOY!
