½ cup quinoa
3/4 cup water
200g tin of tuna – drained
½ medium avocado, sliced lengthways
½ cucumber, sliced julienne
2 sheets nori
Rinse quinoa in a strainer. Place in saucepan with 3/4 cup water and let stand for 15 minutes. Bring to boil, then simmer for 10-15 minutes or until water is absorbed. Let sit, covered for another 10 minutes.
Spoon half of the quinoa onto one sheet of Nori, spread evenly leaving a 2cm strip at the top. Lay half of the tuna, avocado and cucumber in the centre of the quinoa horizontally.
Roll the edge closest to you over the fillings, then roll it tightly over the sushi. Wet the strip of Nori at the top with water and stick sushi together.
Repeat again with the second sushi roll.
Slice sushi roll carefully into pieces with a wet knife. Serve with tamari and wasabi.
