- 500g turkey mince
- 1 teaspoon crushed garlic
- 1 teaspoon dried mixed herbs
- 1 egg
- 2 tablespoons psyllium
- teaspoon sea salt
- 1/2 jar tomato passata
- 1 tablespoon chopped basil
- 1 teaspoon sea salt
- 2 large zucchini
- coconut oil for frying
Combine turkey mince, garlic, herbs, egg, psyllium, salt & pepper in a large mixing bowl and combine well. Roll mixture into small meatballs
In a large frypan brown meatballs using small amount of coconut oil.
Once brown pour over passata, reduce heat and simmer meatballs for approximately 10 minutes or until cooked through.
Add chopped basil and sea salt.
To make zucchini noodles either use a spiralizer or a vegetable peeler to make long ribbons of zucchini
Place noodles in a microwave safe bowl and cook on high for 3 minutes. Season with salt.
Serve zucchini noodles topped with meatballs and tomato sauce.
