- 1/2 onion, diced
- 2 rashers lean bacon, diced
- 1 tsp coconut oil
- 1/2 head of cauliflower
- 2 cups chicken stock
- Black pepper
- 1 tablespoons coconut cream (optional)
Melt coconut oil in a saucepan and saute onion and bacon until soft.
Add chopped cauliflower and chicken stock.
Bring to boil and then simmer gently until cauliflower is soft (approximately 15 minutes)
Season with black pepper.
Remove from heat and blend until smooth.
Serve in a large mug with a dollop of coconut cream if you love a creamier soup.
