Crunchy Coconut Granola

Crunchy coconut GranolaFor a grain free breakfast that is full of crunch, try this Crunchy Coconut Granola.  Top with your favourite sugar free yoghurt, coconut yoghurt or fresh berries.

CRUNCHY COCONUT GRANOLA

  • 1 cup of coconut flakes
  • 1 cup nuts roughly chopped (almonds, cashews, brazil nuts)
  • 1/2 cup seeds (sunflower, pumpkin)
  • 1 tablespoon chia seeds
  • 1/2 teaspoon cinnamon
  • 1 tablespoon coconut oil
  • 1 tablespoon rice syrup

Preheat oven to 130°C.

Combine all ingredients and place on baking tray.

Bake for 15-20 minutes stirring well every 5 minutes. Cook until browned to your liking.

Serve topped with NO SUGAR plain yoghurt, coconut yoghurt or mixed fruit or berries.
