Pecans are a lovely nut that is rich in monounsaturated fatty acids and antioxidants. They are an excellent source of Vitamin E which help protect the body from free radicals. Pecans are packed with vitamins, minerals and protein which make them an excellent addition to your diet.
RAW PECAN SLICE
- 4 dates
- 160g almond meal
- 1 tablespoon cashew butter
- 2 tbsp coconut oil
- 1 tbsp rice malt syrup (or honey)
- 3 tablespoons Bare Blends Chocolate WPI
- 1 cups pecans (roughly chopped)
- 50g dark chocolate (70%)
Place dates, almond meal, cashew butter, coconut oil, rice malt and WPI in a blender and blitz until resembles a crumb.
If mixture is too dry add up to a tablespoon water slowly until a sticky consistency.
Add pecans and combine gently.
Place mixture into a square cake pan and press down firmly.
Melt dark chocolate in a glass bowl in the microwave. Start with 1 minute on high and stir, then 30 seconds and stir – continue with this until melted. Spread evenly over slice.
Place in freezer for 30 minutes and then cut into 16 squares and top with half a pecan if desired.
Store in a container in the freezer or fridge.
Makes 16 squares.
