This Nutty Granola is a great for breakfast topped with some coconut yoghurt and mixed berries.
- 1 cup coconut flakes
- 1/2 cup activated buckwheat
- 1 1/2 cups mixed nuts (preferably activated)
- 1/2 cup pumpkin seeds
- 1 tablespoon chia seeds
- 2 tablespoon coconut oil
- 1/2 tablespoon rice malt syrup or honey (optional)
Preheat oven to 120°C.
Roughly chop coconut flakes and nuts.
Combine in a large bowl with buckwheat, seeds, coconut oil and sweetener.
Spread over a large baking tray and place in oven.
Bake for approximately 30 minutes or until golden, stirring occasionally.
Once cooled store in an airtight glass jar.
SERVE with coconut yoghurt and mixed berries
