INGREDIENTS

Cauliflower Blinis

  • 2 cups extra fine cauliflower rice (cut cauliflower into chunks and blitz or grate until it resembles fine rice grains)
  • 2 eggs
  • Salt and pepper

Guacamole

  • 1/2 avocado
  • 1 tablespoon mayonnaise
  • Squeeze lime juice

Topping

  • 100g packet smoked salmon
  • Fresh dill

METHOD

Preheat oven to 180°C.

Place cauliflower rice in a microwave safe bowl and cook for 2 minutes on high. Stir and cook for a further 2 minutes on high.

Place cooked cauliflower in a tea towel and squeeze out excess moisture. (Be careful it is HOT!!)

Put cauliflower back into a bowl, add eggs and season with salt and pepper. Mix until combined.

Line a baking tray with baking paper and using a small ring about 4cm in diameter put a small spoon of the mixture onto tray about 1-2cm thick.

Bake in oven for about 10 minutes or until starts to golden. Allow to cool.

To make Guacamole – mash avocado with lime juice and mayonnaise until smooth.

Top each Blini with a spoon of avocado and a small piece of smoked salmon.

Finish with a sprig of dill.

Place on a serving platter and enjoy.
