Healthy Muesli cookies

I know you all like a little something with your cuppa in the morning so here it is – the HEALTHY Muesli cookie.

  • ½ cup almond meal
  • ¼ cup tapioca flour
  • ½ cup dessicated coconut
  • ¼ cup pepitas
  • ¼ cup sunflower seeds
  • ¼ cup cranberries
  • ¼ cup coconut oil (melted)
  • ¼ cup rice malt syrup or honey
  • ½ teaspoon vanilla extract
  • Pinch sea salt

Preheat oven to 160°C.

Combine almond meal, flour, coconut, cranberries and seeds.

Add coconut oil, rice malt or honey, vanilla and salt.

Mix through until combined.

Divide into 10 balls and place on a lined cookie tray. Flatten slightly.

Bake for 20 – 30 minutes or until lightly browned.

Transfer to a cooling rack to firm a little before enjoying.
