This soup is so filling and warms up your tummy on these cold winter days. Enjoy this any time of the day. The bone broth base is wonderful for your gut.
CAULIFLOWER & ZUCCHINI SOUP
- 1/4 head cauliflower
- 1 large zucchini
- 1 tablespoon coconut oil
- 3 rashers bacon – diced
- 1/2 onion – diced
- 2-3 cups homemade chicken broth
- (see bone broth in recipe section)
- Sea salt & pepper to taste
Chop cauliflower into small florets and chop zucchini into rounds.
Melt coconut oil in a saucepan and saute onion and bacon until soft.
Add chopped vegetables and chicken broth.
Cover and simmer for 30 minutes until vegetables are soft.
Season with salt and pepper.
Blend in a food processor until smooth and creamy.
You can substitute any vegetable that you like to change up the soup – broccoli works well.
