These nutritious balls are a lovely treat and are packed with antioxidants, good fats & protein. Great as a 3pm pick me up….
CACAO COCONUT BALLS
- 3 dates
- 170g almond meal (or 170g raw almonds ground finely)
- 60 raw macadamias
- 1 tbsp chia seeds
- 1 tbsp coconut oil
- 1 tbsp rice malt syrup
- 1/4 tsp cinnamon
- 1 tsp vanilla extract
- 1 tablespoon raw cacao
- Desiccated coconut to coat
(you can use activated nuts if you find them difficult to digest)
Combine all ingredients (except coconut) in a high power blender. Blend on high speed until mixture resembles sticky crumbs (approximately 30 seconds)
If the mixture is too crumbly add a teaspoon of water and blend again, repeat if necessary.
Press small amounts firmly with hands to form small balls (approximately 35g each).
Roll in coconut (you can add a splash of water to coconut to help it stick to the balls)
MAKES 11 BALLS
(Great kept in the fridge or freezer)
