Cauliflower Sushi

I have to avoid traditional sushi as rice does not agree with me.  Here is a great alternative using cauliflower instead.Cauliflower sushi

INGREDIENTS

  • 1/4 head cauliflower
  • 1 teaspoon sea salt
  • 1 tablespoon mayonnaise
  • 2 nori sheets
  • 1/2 cucumber – cut into long strips
  • 100g smoked salmon
  • 1/2 avocado – sliced
  • Soy sauce, tamari or coconut aminos for dipping

METHOD

Cut cauliflower into chunks and place in a food processor. Blitz until cauliflower resembles rice grains. Alternatively you can grate the cauliflower on a course grater..

Place in a microwave safe bowl, cover and place in microwave on high for 5 minutes. Allow to cool.

Once cool, season with salt and stir through mayonnaise.

Lay nori sheets on a flat surface and cover 3/4 of the sheet with cauliflower approximately 1cm thick.

Along one end of the nori sheet lay slices of avocado, salmon and cucumber on top of the cauliflower.

Wet with water along the uncovered end of the nori roll with your finger or pastry brush.

Roll tightly starting at the end with the salmon, avo & cucumber.

Repeat the second nori sheet. Cut each roll into 4 pieces.

Serve with soy sauce, tamari or coconut aminos.
