Zucchini Hommos

This is a lovely alternative to traditional hommos using my favourite vegetable – the zucchini!

INGREDIEzucchini hommosNTS

  • 2 large zucchini
  • 1/4 cup tahini
  • 1 clove garlic – crushed
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • 1/2 teaspoon cumin
  • 1 teaspoon sea salt
  • 1 teaspoon chilli powder (optional)


Preheat oven to 200°C

Lightly peel zucchini and cut into chunks, toss in olive oil and place in a baking tray.

Bake zucchini for approximately 20 minutes or until very tender.

Allow to cool slightly

Combine zucchini, tahini, garlic, lemon juice, cumin, sea salt & chilli in a blender and blitz until smooth.

Serve with seed crackers and chunks of cucumber.
