Cauliflower pizza base

Cauliflower is such a versatile vegetable.  Here is a pizza base recipe using cauli, it is perfect if you are gluten intolerant or avoiding grain.  Top with your favourite topping.

  • 1 small head or 1/2 large head of cauliflower
  • 2 eggs
  • 2 tablespoon tapioca flour
  • 1 cup grated parmesan cheese
  • 1 teaspoon sea salt

METHOD

Preheat oven to 200°C.

Chop cauliflower into small pieces and pulse in a food processor until it resembles rice. (Alternatively grate on a course grater)

Spread evenly on a baking sheet lined with baking paper. Bake for about 15 minutes until starts to brown slightly. Toss every 5 minutes.

Lay a nut milk bag or thin tea towel over a large bowl and put cauliflower into the bag. Let the cauliflower cool completely and then squeeze out excess moisture. You should get a fair bit of liquid out.

Add the remainder of the ingredients to the dry cauliflower and mix well.

Line a baking stray with baking paper and draw 3 x 20cm diameter circles.

Divide the cauliflower mixture between each circle and spread out evenly.

Bake in oven for 10 minutes or until it starts to brown on top. Remove from oven and place another piece of baking paper on top of bases and flip over. Return to oven and cook for a further 10 minutes.

NOW – add your favourite pizza sauce, toppings and a little pizza cheese and cook for 10 minutes or until the cheese has melted.

Makes 3 pizzas.
